Hardys "Thomas Hardy" Coonawarra Cabernet Sauvignon 1994

The "Thomas Hardy" label honours the founder of Hardys wines in Australia. He was a grand pioneer whom, barely out of his teens, arrived from England and began to shape the South Australian wine industry.
Reserved for our best Cabernet Sauvignon, the Thomas Hardy label represents the pinnacle of our Australian viticulture and winemaking. Each vintage is matured in 100% French oak for 24 months and released after 4 years of age. Given the exemplary 1994 Coonawarra vintage a small allocation of this wine was reserved for extended cellaring in the Hardys museum. Now deemed worthy of its "Museum" status, this wine is released after 6 years of maturation.
Crafted using traditional open fermenters and basket pressed, this wine shows richly developed and integrated red currant fruit and vanillin oak flavours complemented by leather, cedar and cassis. The finely grained tannins have softened and provide structure and a rewarding finish. Further flavour development will be gained with cellaring. We recommend decanting this wine prior to serving.

Katnook Estate Odyssey Cabernet Sauvignon was first released to commemorate the centenary of the first vintage made in the historic woolshed on the property on 1896. The wine was named to reflect the ongoing journey of Katnook Estate with its roots in the past and its sights on the future.
That first commemorative wine in 1996 was from the 1991 vintage and since then a further three vintages have been released, described variously by experts as, .the best of the best., Philip White, Australia, .a beautifully crafted and elegant wine,. James Halliday. Starting with the most outstanding estate grown fruit and finished with the selection of the best individual barrels of the resulting wine for final blending, Odyssey Cabernet Sauvignon is crafted with the most time consuming attention to detail.
Deep garnet red with deep purple edges. A sophisticated array of rich earthy fruit and oak matured tones. There are ripe berry and dusty mulberry fruit aromas, with hints of liquorice, chocolate/mocha and cedar notes. A concentrated, layere palate structure of rich fruit and oak maturation flavours. Ripe berries, hints of liquorice, and dusty fruit flavours have blended seamlessly with the sweet vanilla from French oak and mocha characters from the long oak maturation period. A firm slightly chalky tannin structure extends the intense lingering finish.

Penfolds Bin 707 is widely regarded as 'benchmark' Australian Cabernet Sauvignon. It is a well-structured, full-bodied wine that has great intensity and concentration of fruit, balanced with finely integrated oak resulting from 15 months maturation in new American oak hogsheads.
Opaque, deep red. Ripe red berries together with varietal, leafy cassis fruits. Stylish integrated oak, hints of smokiness and subtle cedar aromas. Rich and ripe with dark cherry and raspberry fruit flavours, some dark chocolate and integrated smoky oak.

Cyril Henschke, 1924-1979, was one of Australia's outstanding winemaking pioneers, renowned for the production of varietal table wines, with the accent on quality and flavour.
The 1995 Cyril Henschke Cabernet Sauvignon was produced as a tribute, from 70% Cabernet Sauvignon 16% Merlot and 14% Cabernet Franc, grown at Eden Valley and matured for 21 months in new French oak barrels prior to bottling.
The Henschke family have been winemakers at Keyneton, South Australia, for five generations, with a proud heritage and a philosophy for exceptional wines from outstanding vineyards.
