Sparkling White
'Sparklers' contain dissolved carbon dioxide gas, which is released on opening. The classic process that produces sparkling wines is 'methode champenoise', in which a second fermentation of the wine takes place in the bottle. Other sparkling wines may have carbon dioxide injected before the bottle is sealed.

Sparkling Red
Previously known in Australia as "Sparkling Burgundies", Australia began making Sparkling Reds as early as the 1860's. Wonderful aromas of blackcurrants, blackberries, chocolate, cherries, strawberries and more are evident of the red sparkler. It has become a popular drink for Australians. The Sparkling Cabernet goes great with Turkey, hence its popularity at Christmas time. But why wait for Christmas? Why not enjoy different varieties all year round?
